Cuisine American
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can cream of mushroom soup 10.5 oz
- 1 cup chicken broth
- 1 packet onion soup mix
- 1 tablespoon olive oil
- salt and pepper to taste
- fresh herbs optional, for garnish
Preheat the oven to 350°F (175°C).
In a large baking dish, drizzle the olive oil to coat the bottom.
Spread the uncooked rice evenly across the dish. In a separate bowl, combine the cream of mushroom soup, chicken broth, and onion soup mix, stirring until well mixed. Pour the mixture evenly over the rice.
Season the chicken breasts with salt and pepper, then place them on top of the rice mixture.
Cover the dish tightly with aluminum foil. Bake for about 1 hour, or until the chicken is cooked through and the rice has absorbed the liquid.
Once done, remove from the oven and allow it to rest for 10 minutes.
Fluff the rice with a fork, serve the chicken on top, and enjoy your No Peek Chicken and Rice.
