Preparation

  • In a saucepan, combine the chopped rhubarb and granulated sugar over medium heat. Cook until the rhubarb is softened, about 5 minutes. Remove from heat and allow it to cool completely.
  • In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a lined 9×9-inch baking dish to form the crust.
  • In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Fold the cooled rhubarb into the cream cheese mixture, ensuring that the rhubarb is evenly distributed.
  • Pour the cream cheese and rhubarb mixture over the prepared graham cracker crust. Spread it evenly and smooth the top.
  • Cover and refrigerate the rhubarb cheesecake squares for at least 4 hours or overnight until set.
