  • ½ cup creamy peanut butter Ensure it's smooth for easy mixing.
  • ¼ cup honey or maple syrup Can adjust according to preference.
  • 1 teaspoon vanilla extract Adds a nice flavor boost.
  • 1 teaspoon pumpkin pie spice Or use a mixture of cinnamon and nutmeg.
  • 1 cup rolled oats Old-fashioned oats will work best.
  • ½ cup chocolate chips (optional) For a touch of sweetness.

Preparation

  • In a large mixing bowl, combine the canned pumpkin puree, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.
  • Sprinkle in the pumpkin pie spice and rolled oats. Mix until fully combined.
  • If you’re opting for chocolate chips, add them in and fold gently into the mixture.
  • Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  • Roll each pumpkin bite in crushed nuts or graham cracker crumbs. Place them on a parchment-lined baking sheet and refrigerate for at least 15 minutes.

Serving

  • Once chilled, serve your No-Bake Pumpkin Bites on a platter.

Notes

These bites can be paired with whipped cream or vanilla ice cream for an enhanced experience. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
