  • 1/2 cup nut butter (peanut, almond, or any favorite)
  • 1/3 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional) For a chocolatey twist
  • 1/4 cup protein powder (optional, but recommended)
  • 1 tsp vanilla extract

Preparation

  • In a large bowl, combine the rolled oats, nut butter, honey, protein powder (if using), and vanilla extract. Add a pinch of salt for flavor.
  • If you want a chocolatey twist, fold in the chocolate chips.
  • Use your hands to shape the mixture into small cookie-sized portions and place them on a parchment-lined baking sheet.
  • Transfer the baking sheet to the fridge and let the cookies chill for at least 30 minutes to firm up.
  • Once chilled, they’re ready to be devoured! Store leftovers in an airtight container in the fridge.

Notes

These cookies are best stored in an airtight container in the refrigerator, where they will stay fresh for about a week. To stock up, you can freeze them individually, thaw at room temperature or microwave for a warm treat.
