Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1 cup peanut butter
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

For the Topping

  • Chocolate sauce for drizzling
  • Chopped peanuts optional

Preparation

  • In a medium bowl, combine graham cracker crumbs and sugar. Pour in melted butter, stirring until the mixture is well combined. Press the crust mixture firmly into the bottom of a lined 9x9 inch square baking pan.

Make the Cheesecake Filling

  • In a large bowl, beat the softened cream cheese until smooth. Gradually mix in the peanut butter, powdered sugar, and vanilla extract, ensuring it’s all blended well.

Fold in the Whipped Cream

  • Gently fold the whipped cream into the peanut butter mixture until smooth and fluffy.

Combine Layers

  • Evenly spread the cheesecake filling over the graham cracker crust, smoothing out the top with a spatula.

Chill

  • Place the pan in the refrigerator and let it chill for at least 4 hours, allowing the bars to firm up.

Serve

  • Once set, remove the bars from the pan and cut them into squares. Drizzle with chocolate sauce and sprinkle with chopped peanuts, if desired.
