Base Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup Choose according to preference.
  • 1 tablespoon lemon juice
  • 1 lemon zest of 1 lemon
  • a pinch salt

Mix-ins

  • 2 tablespoons poppy seeds
  • 1/4 cup protein powder (optional) For an added protein boost.

Preparation

  • In a large mixing bowl, combine the rolled oats, almond butter, honey or maple syrup, lemon zest, lemon juice, and a pinch of salt. Mix them well until fully incorporated.
  • Stir in the poppy seeds, ensuring they are evenly distributed throughout the mixture.
  • If you wish to add protein powder, sprinkle it in and mix until the mixture holds shape. Adjust consistency by adding more almond butter or honey if too dry, or more oats if too sticky.
  • Scoop out small portions of the mixture and roll them into balls about 1 inch in diameter.
  • Place the protein balls onto a parchment-lined baking sheet and refrigerate for at least 30 minutes to help them firm up.
  • Once cooled, these protein balls are ready to enjoy! Store leftovers in the fridge for up to a week.

Notes

Mix in other flavorings like vanilla or ginger for a creative twist. Store in an airtight container.
