Ingredients

For the cookie mixture

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter or a butter substitute
  • 1/2 cup milk
  • 3 cups quick-cooking oats
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

Preparation

  • In a medium saucepan, combine the granulated sugar, cocoa powder, butter, milk, and a pinch of salt over medium heat. Stir continuously until the mixture comes to a gentle boil.
  • Let it boil for exactly 1 minute while stirring constantly. This helps in achieving that delicious, fudgy consistency.
  • Remove the pan from heat and quickly mix in the quick-cooking oats and vanilla extract. Ensure everything is well combined for even flavor distribution.
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  • Let the cookies cool at room temperature for about 30 minutes, or until they are set.
  • Once set, they are ready to be enjoyed! Store them in an airtight container.

Notes

Feel free to use coconut oil as a healthier alternative to butter. For a nutty flavor, you can add nut butter as a substitute for some of the cocoa. Store in an airtight container for up to a week or refrigerate for longer freshness.
