  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup shredded sharp cheddar cheese divided
  • 1 cup chicken broth
  • 2 cups egg noodles
  • 1 cup breadcrumbs for topping
  • to taste salt and pepper
  • optional: chopped parsley for garnish

Preparation

  • Preheat your oven to 350°F (175°C).
  • Boil the egg noodles according to package instructions until al dente. Drain and set aside.
  • In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, chicken broth, and half of the shredded cheese. Season with salt and pepper.
  • Add the cooked noodles to the chicken mixture and stir until everything is well coated.
  • Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.
  • Sprinkle the remaining cheese and breadcrumbs over the top for that crunchy finish.
  • Bake for about 25-30 minutes, or until the casserole is bubbly and golden on top.
  • Allow to cool slightly before serving; garnish with chopped parsley if desired.

Notes

Leftover casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, oven at 350°F for 15-20 minutes or microwave individual portions. Can be frozen for up to 3 months.
