Main ingredients

  • 1 whole chicken (about 4-5 lbs) 1 whole chicken (about 4-5 lbs) Use only Halal-certified meat.
  • 1 cup 1 cup Dijon mustard
  • 1 tablespoon 1 tablespoon olive oil
  • 4 cloves 4 cloves garlic, minced
  • 1 teaspoon 1 teaspoon dried thyme Fresh herbs can be used for better flavor.
  • 1 teaspoon 1 teaspoon paprika
  • to taste salt and black pepper Salt and black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Rinse the chicken and pat it dry with paper towels.

Marinate

  • In a mixing bowl, combine the Dijon mustard, olive oil, minced garlic, thyme, paprika, salt, and black pepper. Mix until well combined and coat the chicken thoroughly.

Rest

  • Allow the chicken to rest for 15-30 minutes at room temperature.

Roasting

  • Place the chicken in a roasting pan and roast for about 1 hour or until the internal temperature reaches 165°F (75°C), basting occasionally with juices.

Rest Again

  • Remove from the oven and let it rest for about 10 minutes before carving.

Notes

Substitute Dijon mustard with whole-grain mustard for added texture. Check the internal temperature to avoid overcooking. Store leftovers in the refrigerator for 3-4 days and reheat at 350°F (175°C) for 15-20 minutes.
