Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or grated Parmesan

Instructions
 

  • Prepare the Chicken:
  • Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  • Cook the Chicken:
  • Add the chicken to the skillet and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • Sauté the Mushrooms:
  • In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until golden and tender, about 5-7 minutes. Stir occasionally to ensure even cooking.
  • Add Garlic and Seasoning:
  • Stir in the minced garlic and thyme (or Italian seasoning), cooking for about 1 minute until fragrant.
  • Make the Sauce:
  • Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
  • Combine with Chicken:
  • Return the cooked chicken breasts to the skillet, spooning the sauce and mushrooms over the top. Simmer for an additional 3-4 minutes to reheat the chicken and meld the flavors.
  • Serve:
  • Transfer the chicken and sauce to serving plates and garnish with chopped parsley or grated Parmesan if desired.
