Dough Ingredients

  • 1 ½ cups warm water (110°F)
  • 1 packet (2 ¼ teaspoons) active dry yeast Make sure it's fresh.
  • 1 tablespoon sugar For activating yeast.
  • 4 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • ¼ cup baking soda For boiling pretzels.
  • 1 large egg (beaten, for egg wash)
  • 8 oz mozzarella cheese (cut into sticks) Cut into sticks for filling.
  • Coarse sea salt, for sprinkling

Preparation

  • In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  • Gradually add in the flour and salt. Mix with a wooden spoon or your hands until a soft dough forms. Knead for about 5 minutes until the dough is smooth and elastic.
  • Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for 1 hour or until it doubles in size.
  • Preheat your oven to 425°F (218°C). Once the dough has risen, turn it out onto a floured surface and divide it into 8 equal pieces. Roll each piece into a long rope (about 20 inches long), then shape into a pretzel. Place a mozzarella stick in the center of the pretzel and fold the ends over to seal securely.
  • In a large pot, bring 8 cups of water to a boil. Stir in the baking soda. Carefully lower the pretzels into the boiling water, 2 or 3 at a time, for about 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  • Brush the top of each pretzel with the beaten egg and sprinkle with coarse sea salt.
  • Bake in the preheated oven for 12-15 minutes until golden brown.
  • Allow the pretzels to cool slightly before serving. Enjoy them warm!

Notes

For variety, try different fillings like cheddar cheese or add Italian herbs. Store leftovers in an airtight container for up to 3 days.
