Ingredients
  

For the Dough

  • 1.5 cups 1 1/2 cups warm water Warm but not hot
  • 1 packet 1 packet active dry yeast Ensure freshness
  • 1 tablespoon 1 tablespoon sugar
  • 4 cups 4 cups all-purpose flour
  • 1 teaspoon 1 teaspoon salt

For the Filling and Topping

  • 1 cup 1 cup mozzarella cheese (cubed) Use quality mozzarella
  • 0.25 cup 1/4 cup baking soda
  • 1 egg 1 egg (beaten, for egg wash)
  • Coarse sea salt (for sprinkling)

Preparation

  • In a bowl, mix warm water, yeast, and sugar. Let it sit for about 5 minutes until it becomes frothy.
  • In a large bowl, combine flour and salt. Gradually add the yeast mixture and knead it until smooth.
  • Allow the dough to rise for 1 hour in a warm place.

Baking

  • Preheat the oven to 450°F (230°C).
  • Divide the dough into pieces, flatten each piece, and place a cube of mozzarella in the center.
  • Roll and shape the dough around the cheese to form a pretzel shape.
  • In a large pot, boil water and baking soda. Boil each pretzel for 30 seconds, then remove and place them on a baking sheet.
  • Brush each pretzel with the beaten egg and sprinkle with coarse salt.
  • Bake for 12-15 minutes until golden brown.

Notes

Best served warm. Optionally dip in marinara sauce, mustard, or cheese sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
