  • 2 large cucumbers, peeled and thinly sliced Choose firm cucumbers for a great crunch.
  • 1 small onion, finely chopped Red or yellow onion works well.
  • 1 cup sour cream or Greek yogurt Use Greek yogurt for a healthier option.
  • 1 tablespoon white vinegar or apple cider vinegar Adjust to taste.
  • 1 teaspoon sugar (optional) Balances the tanginess.
  • Salt and pepper, to taste Season to enhance flavors.
  • Fresh dill or parsley, for garnish (optional) Adds flavor and color.

Preparation

  • Peel and thinly slice the cucumbers. Optionally, leave the skin on for added texture.
  • In a medium bowl, combine the sour cream and vinegar. Stir well to create a smooth mixture, adding sugar if desired.
  • In a large bowl, add the cucumbers and chopped onions. Pour the creamy dressing over the vegetables.
  • Add salt and pepper to taste. Remember that seasoning is key to enhancing the flavors!
  • Refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with fresh dill or parsley before serving.

Notes

Store leftover salad in an airtight container in the refrigerator for 1-2 days. Best enjoyed cold straight from the fridge. This salad does not freeze well, but cucumbers and dressing can be prepared separately for quick assembly.
