Ingredients
  

Wet Ingredients

  • ½ cup brown sugar, packed
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Main Ingredients

  • 2 cups grated zucchini about 2 medium zucchinis
  • ½ cup chopped walnuts optional
  • ½ cup chocolate chips optional

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • Grate the zucchini, and if it seems watery, squeeze it in a clean kitchen towel to remove excess moisture.
  • In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined. Add in the eggs one at a time, mixing thoroughly after each addition, followed by the vanilla extract.
  • In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix until fully combined.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated zucchini, walnuts, and chocolate chips if using.

Baking

  • Pour the batter into the prepared loaf pan. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for about 10 minutes, then move it to a wire rack to cool completely.

Notes

Serve warm with softened butter or cream cheese. Pairs well with coffee, tea, yogurt, or fruit salad. Store in an airtight container for up to 3 days at room temperature or a week in the fridge.
