Ingredients
  

Wet Ingredients

  • 2 pieces ripe bananas Make sure they are ripe for the best flavor.
  • 1 cup grated zucchini About 1 medium zucchini.
  • 1/2 cup olive oil or unsweetened applesauce Use applesauce for a lighter option.
  • 1/2 cup honey or maple syrup Can swap with more mashed bananas for added sweetness.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional) Optional but adds great flavor.
  • 1 1/2 cups whole wheat flour

Optional Add-ins

  • 1/2 cup chopped nuts Optional, can use walnuts or pecans.
  • 1/2 cup chocolate chips Optional for added sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • In a mixing bowl, mash the ripe bananas until smooth. Add the grated zucchini, olive oil or applesauce, honey or maple syrup, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the baking soda, baking powder, salt, cinnamon, and whole wheat flour. Ensure there are no lumps.
  • Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix! If you want to include nuts or chocolate chips, fold them in at this stage.
  • Pour the batter into the prepared loaf pan, and smooth the top with a spatula.

Baking

  • Bake in the preheated oven for 50-60 minutes. The bread is done when a toothpick inserted in the center comes out clean.
  • Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice it up and enjoy this deliciously moist bread with a friend or family member!

Notes

For storage, keep in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly in plastic wrap and freeze for up to 3 months. Simply thaw at room temperature or warm slices in the microwave before serving.
