Ingredients
  

Sweet Potatoes

  • 2 medium medium sweet potatoes, peeled and diced

Miso Glaze

  • 2 tablespoons miso paste (choose your favorite flavor)
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup

Grains

  • 1 cup cooked grains (such as quinoa, farro, or rice) Choose according to preference.

Greens

  • 1 cup cooked greens (spinach or kale work nicely)

Seasoning and Garnish

Preparation

  • Preheat your oven to 425°F (220°C). While it heats, peel and dice your sweet potatoes into bite-sized cubes.

Miso Glaze

  • In a small bowl, whisk together the miso paste, olive oil, and maple syrup until you have a smooth mixture.

Coat Sweet Potatoes

  • In a large mixing bowl, toss the diced sweet potatoes with the miso glaze, ensuring every piece is coated evenly.
  • Spread them out on a baking sheet lined with parchment paper.

Roasting

  • Bake in the preheated oven for about 25 minutes or until the sweet potatoes are tender and have a beautiful golden hue, flipping once halfway through.

Prepare Grains

  • In the meantime, prepare your grains according to the package instructions.

Cook Greens

  • Sauté your choice of greens (spinach or kale) in a pan with a splash of water or olive oil for about 3-5 minutes, just until wilted.

Assemble

  • In each bowl, layer a base of grains, topped with roasted sweet potatoes and cooked greens. Season with salt and pepper to taste.

Garnish and Serve

  • Sprinkle with sesame seeds and chopped green onions, then serve warm and enjoy!

Notes

To make the best bowl possible, consider using uniform sweet potato cuts for even cooking. This dish can be refrigerated for up to 3 days or frozen for a month—just reheat with a splash of water for the greens.
