Mint Chocolate Cheesecake Pie

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese softened
  • 1 cup powdered sugar

  • 1 cup whipped cream
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions
 

  • Start by preparing the crust. In a bowl, combine chocolate cookie crumbs and melted butter. Mix until fully combined.
  • Press the mixture into the base of a pie dish and refrigerate for at least 30 minutes to set.
  • While the crust is chilling, make the cheesecake filling. Beat the softened cream cheese with powdered sugar and mint extract until smooth and creamy.
  • In a separate bowl, fold in the whipped cream until well combined.
  • Once the crust is set, spread the cheesecake mixture evenly over the base.
  • To create the swirl, melt the semi-sweet chocolate chips with the vegetable oil. Drizzle the melted chocolate on top of the cheesecake.
  • Using a toothpick or knife, swirl the chocolate into the cheesecake to create a marbled effect.
  • Refrigerate the pie for at least 3 hours, or overnight for best results.
