- 2 cups of diced apples Granny Smith or Honeycrisp work well
- 1 teaspoon lemon juice
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon cornstarch
- 2 pre-made pie crusts
- 1 egg beaten, for egg wash
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Apples: In a bowl, combine the diced apples with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch. Toss until the apples are well-coated.
Roll Out the Pie Crusts: Unroll the pie crusts on a clean, floured surface. Use a round cutter or a glass to cut out circles about 4 inches in diameter.
Fill the Crusts: Place a spoonful of the apple filling in the center of each circle. Be careful not to overfill!
Seal the Pies: Fold the crust over the filling to create a half-moon shape and press the edges with a fork to seal.
Apply Egg Wash: Transfer the mini pies to a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a beautiful golden finish.
Bake: Bake in the preheated oven for 15-20 minutes or until golden brown.
Cool and Serve: Allow the mini apple pies to cool slightly before serving. They’re delightful on their own or with a scoop of vanilla ice cream!
