Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • ½ cup unsalted melted butter
  • ¼ cup granulated sugar

For the layers

  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • ½ cup chopped walnuts or pecans optional

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×9-inch baking dish or line it with parchment paper.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until moistened and press into the bottom of the dish to form the crust.
  • Sprinkle the shredded coconut evenly over the crust.
  • Sprinkle the semi-sweet chocolate chips and butterscotch chips over the coconut layer, adding nuts if desired.
  • Bake for 25 minutes or until the edges are lightly golden brown and the center is set.
  • Remove from the oven and allow to cool completely before cutting into bars.
  • Cut into squares and enjoy!

Notes

For substitutions, use coconut oil in place of butter and dark chocolate chips for a richer flavor. Store in an airtight container for 3 to 5 days at room temperature or refrigerate for up to 7 days. Can be frozen for up to a month.
