Ingredients

  • 2 medium Meyer lemons, juiced and zested Be sure to wash thoroughly before using.
  • 1 cup olive oil
  • 1 tablespoon honey or maple syrup Use maple syrup for a vegan option.
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh herbs like thyme or parsley, for garnish
  • Protein of your choice (chicken, fish, or tofu) Adjust cooking time based on the protein selected.

Preparation

  • In a bowl, whisk together the olive oil, the juice and zest of the Meyer lemons, minced garlic, honey, salt, and pepper.

Marinating

  • Place your chosen protein in a shallow dish and pour the marinade over the top, ensuring everything is well-coated. Let it marinate for at least 15 minutes.

Cooking

  • Preheat your oven to 400°F (200°C) or heat a grill pan over medium-high heat.
  • Bake or grill chicken or fish until cooked through. For tofu, ensure it’s nicely caramelized on the outside.

Serving

  • Once cooked, remove from heat and garnish with fresh herbs and a sprinkle of extra lemon zest.

Notes
