  • 2 cups corn (fresh, frozen, or canned, drained) Fresh corn is best for flavor.
  • 1 cup sour cream Use a full-fat version for creaminess.
  • 1 cup mayonnaise For a rich and creamy base.
  • 1 cup cbled Cotija cheese (or substitute with feta cheese) Feta can be used if Cotija is unavailable.

Seasonings

  • 1 teaspoon chili powder Adjust to taste for heat level.
  • 1 teaspoon cumin Adds warm, earthy flavor.
  • 1 clove garlic, minced For aromatic flavor.
  • 2 tablespoons lime juice Fresh lime juice enhances flavor.

Garnish

Preparation

  • If using fresh corn, grill or boil it until tender. Let it cool, then cut the kernels from the cob. If using frozen corn, cook it according to package instructions.
  • In a large bowl, combine the sour cream, mayonnaise, and lime juice. Stir until well mixed.
  • Incorporate the chili powder, cumin, minced garlic, salt, and pepper into the mixing bowl. Stir to combine.
  • Add the cooked corn to the mixture and fold in the cbled Cotija cheese.
  • Cover the bowl and let the dip chill in the refrigerator for at least 15 minutes to allow the flavors to meld together.
  • Before serving, garnish with additional Cotija cheese and chopped cilantro. Serve it with crispy tortilla chips or fresh veggie sticks for dipping.

Notes

For best flavor, use fresh corn. If desired, jalapeños can be added for additional heat. Customize toppings with diced tomatoes or avocado.
