  • 1 lemon juiced

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant and slightly golden, about 1-2 minutes. Refrain from burning, as garlic can turn bitter.
  • Toss in the chopped kale or spinach. Stir occasionally until wilted, about 3-5 minutes.
  • Gently fold in the rinsed white beans. Stir to combine, allowing the beans to warm through, about 3-4 minutes.
  • Squeeze the juice of one lemon over the mixture. Season with salt and pepper to taste, stirring once more.
  • If you like a little spice, sprinkle in some red pepper flakes at this stage.
  • Take the skillet off the heat, garnish with fresh herbs, and serve warm. Enjoy your Mediterranean flavors!

Notes

Substitutions: If you have other greens on hand (like Swiss chard or collard greens), feel free to substitute! You can also swap lemon juice with a dash of vinegar for a different tang.
