  • 4 pieces whole wheat wraps
  • 1 cup hummus Opt for quality hummus for the best flavor.
  • 1 pieces cucumber, sliced For added crunch.
  • 1 pieces red bell pepper, sliced Adds sweetness and color.
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced For a sharp flavor.
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or dairy-free option.
  • 1 cup olives, sliced
  • 2 cups lettuce or spinach For added nutrition.

Instructions
 

Preparation

  • Wash and slice all your vegetables as indicated above.
  • Take a whole wheat wrap and spread a generous layer of hummus over the entire surface.
  • Start layering your sliced cucumbers, bell peppers, cherry tomatoes, red onion, olives, and feta cheese.
  • Place a handful of lettuce or spinach on top of the veggies.
  • Drizzle a little olive oil and sprinkle salt and pepper to taste.
  • Carefully fold in the sides of the wrap and then roll it tightly from the bottom to the top.
  • Cut your wraps in half diagonally and serve them with additional hummus or a side of yogurt for dipping.

Notes
