Ingredients
  

For the Tzatziki Dressing

  • 1 cup plain Greek yogurt Can be adjusted based on preference.
  • 1 clove garlic, minced
  • 1 medium cucumber, diced Fresh cucumber adds crunch.
  • 1 Juice of 1 lemon Fresh lemon juice enhances flavor.
  • 2 tablespoons fresh dill, chopped Adjust according to taste.
  • to taste salt and pepper Season to preference.

For the Salad

  • 1 can (15 oz) chickpeas, drained and rinsed Great source of protein.
  • 1 cup cherry tomatoes, halved Adds sweetness and color.
  • ¼ cup red onion, finely chopped Adds a mild onion flavor.

Instructions
 

Prepare the Tzatziki Dressing

  • In a medium bowl, combine the Greek yogurt, minced garlic, diced cucumber, lemon juice, chopped dill, salt, and pepper. Mix until smooth and creamy, adjusting seasoning as desired.

Combine the Salad

  • In a large mixing bowl, add the drained chickpeas, halved cherry tomatoes, and chopped red onion. Gently fold in the tzatziki dressing until everything is well coated.

Chill and Serve

  • Allow the salad to chill in the refrigerator for about 10-15 minutes before serving. This allows the flavors to meld beautifully! Serve in bowls and enjoy.

Notes

This salad can be paired with warm pita bread, grilled chicken or fish for a protein boost, or roasted vegetables. It’s best enjoyed cold. If adjusting flavors, consider adding bell peppers or olives as alternatives.
