Ingredients
  

For the Salad

  • 1 pound shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced

For the Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Wash and prepare all your ingredients. Peel and devein the shrimp, dice the avocado, and halve the cherry tomatoes. Dice the cucumber and thinly slice the red onion.

Cooking

  • In a skillet over medium heat, heat 1 tablespoon of olive oil. Season the shrimp with salt, pepper, and half of the dried oregano. Add the shrimp to the skillet, cooking for about 2-3 minutes on each side until they turn pink and opaque. Once cooked, remove from heat and allow to cool slightly.

Combining

  • In a large mixing bowl, combine the cooked shrimp, diced avocado, halved cherry tomatoes, diced cucumber, and sliced red onion.

Dressing

  • In a separate small bowl, mix the remaining olive oil, lemon juice, the rest of the dried oregano, salt, and pepper to taste to create your dressing. Drizzle the dressing over the salad mixture.

Serving

  • Gently toss the salad until everything is well coated, being careful not to mash the avocado. Garnish with fresh parsley before serving.

Notes

For substitutions, consider grilled chicken or chickpeas for a vegetarian alternative. To prevent avocado browning, prepare other ingredients ahead of time and toss them in just before serving.
