Salad Base

  • 2 cups Romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Preparation

  • Chop the Romaine lettuce into bite-sized pieces and place it in a large salad bowl.
  • Toss in the halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  • Add the Kalamata olives, spreading them throughout the salad.
  • Gently sprinkle crumbled feta cheese over the top.
  • Finish off with fresh parsley sprinkled generously, and mix everything gently to combine.

Dressing Preparation

  • In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper until well blended.

Final Steps

  • Drizzle the dressing over the salad just before serving.
  • Toss lightly to coat and enjoy immediately.

Notes

For ingredient substitutions, feel free to swap feta for goat cheese. Add dressing just before serving to keep the salad crisp. Store leftovers in an airtight container for 2-3 days.
