  • 1 can (15 oz) beans (e.g., chickpeas or black beans), rinsed and drained
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preparation

  • In a medium-sized pot, bring 2 cups of vegetable broth to a boil.
  • Add in 1 cup of rice, cover the pot, and lower the heat to a simmer.
  • Let it cook for about 15-20 minutes, or until the rice is tender and the broth is fully absorbed.

Combining Ingredients

  • While the rice is cooking, take a large bowl and combine the rinsed beans, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
  • Drizzle the olive oil and lemon juice over the bean mixture. Sprinkle the dried oregano, and season with salt and pepper to taste.
  • Toss everything gently to combine, ensuring all the ingredients are coated in the seasoned oil.

Final Assembly

  • Once the rice is cooked, fluff it with a fork and add it to the bowl of bean mixture.
  • Toss everything together until evenly mixed.
  • Transfer the Mediterranean Rice and Beans to a serving dish.
  • Garnish with fresh parsley for that pop of color and flavor. Serve warm and enjoy!

Notes

Feel free to swap out beans or add different vegetables based on what you have on hand. Cooking rice perfectly and allowing it to rest will elevate your dish. Avoid overcooking beans.
