Main Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • to taste Salt and pepper
  • 2 tbsp olive oil for cooking

Preparation

  • Gather all your ingredients and chop the veggies as needed.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the ground beef and season lightly with salt and pepper. Cook until browned, stirring occasionally, about 5–7 minutes.
  • Once the beef is browned, add the diced onion and chopped bell pepper to the skillet. Cook for another 3–4 minutes until the veggies are slightly soft.
  • Stir in the minced garlic, oregano, and paprika. Cook for 1–2 minutes until fragrant.
  • Add the halved cherry tomatoes, stirring everything together. Cook for an additional 3–4 minutes until heated through.
  • Remove from heat and serve with your favorite toppings like crumbled feta or fresh parsley!

Notes

You can swap ground beef for turkey or chicken if preferred. This dish can also be made vegetarian by using lentils or plant-based ground meat. Don't overcook the vegetables; they should remain tender yet slightly crunchy.
