Main Ingredients

  • 1 pound Ground beef Lean ground beef is recommended.
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 piece Bell pepper, sliced Any color you prefer.
  • 1 medium Zucchini, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Spinach or kale You can use either leafy green.
  • 2 teaspoons Dried oregano
  • 1 teaspoon Paprika
  • 3 tablespoons Olive oil
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped
  • for serving Lemon wedges

Instructions
 

Preparation

  • Start by chopping all your vegetables and measuring out your spices.

Cooking

  • Heat two tablespoons of olive oil in a large wok or skillet over medium-high heat.
  • Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  • Once the beef is cooked, push it to one side of the pan. Add the chopped onion and minced garlic on the other side. Sauté until fragrant and the onion is translucent, about 2-3 minutes.
  • Add the bell pepper and zucchini to the pan, stirring everything together. Cook for another 3-4 minutes until the vegetables start to soften.
  • Toss in the cherry tomatoes, spinach (or kale), dried oregano, paprika, salt, and pepper. Stir well and cook for an additional 2-3 minutes until the greens wilt and the tomatoes are heated through.
  • Drizzle with the remaining olive oil and mix well. Finish off with a sprinkle of fresh parsley and serve with lemon wedges on the side.

Notes

Feel free to mix and match the vegetables based on availability. Store leftovers in an airtight container for up to 3 days.
