  • 4 pieces chicken thighs (bone-in, skin-on for extra crispiness)
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 unit Juice of 1 lemon
  • to taste Salt and pepper
  • for garnish Fresh parsley (optional)
  • for topping Sliced olives and cherry tomatoes (optional)

Instructions
 

Preparation

  • Begin by whisking together olive oil, garlic powder, onion powder, paprika, oregano, thyme, lemon juice, salt, and pepper in a medium bowl.
  • Place the chicken thighs in a large resealable bag or bowl and pour the marinade over them. Ensure each piece is well coated.
  • Seal the bag or cover the bowl and let it marinate for at least 30 minutes, or preferably overnight in the fridge.

Cooking

  • Preheat your oven to 425°F (220°C).
  • Place the marinated chicken thighs on a baking sheet lined with parchment paper, leaving some space between them.
  • Bake in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
  • Let the chicken rest for a few minutes. Garnish with fresh parsley and top with sliced olives and cherry tomatoes, if desired.

Notes

If using fresh herbs, feel free to substitute as they can add more flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months.
