  • Begin by peeling the sweet potatoes and cutting them into 1-inch cubes for quicker cooking.
  • Place the cubed sweet potatoes in a large pot and cover them with water. Bring to a boil over high heat, then reduce the heat to a simmer and cook for about 15-20 minutes, or until tender when pierced with a fork.
  • Once cooked, carefully drain the sweet potatoes and return them to the pot.
  • Add the softened butter, brown sugar, and milk to the pot. Mash the sweet potatoes using a potato masher or electric mixer until smooth and creamy.
  • Stir in the vanilla extract, and season with salt and pepper to taste. Feel free to adjust the sweetness by adding more brown sugar if desired.
  • Transfer the mashed sweet potatoes to a serving dish and enjoy warm.
