Ingredients
  

For the mixture

  • 2 cups mashed potatoes (preferably leftover) Use previously prepared mashed potatoes for best results.
  • 1 cup shredded cheddar cheese Can substitute with any cheese of your choice.
  • 1/2 cup flour
  • 1/4 cup green onions (finely chopped) Can be replaced with chives for a milder flavor.
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 eggs beaten Helps bind the mixture together.
  • Oil for frying Use sufficient oil for deep frying.

Preparation

  • In a mixing bowl, combine leftover mashed potatoes, shredded cheese, flour, green onions, garlic powder, salt, and pepper. Mix until all ingredients are well blended.
  • Incorporate the beaten eggs into the mixture and stir until fully combined.
  • In a deep frying pan, heat oil over medium heat. To test if it’s ready, drop a small amount of the mixture into the oil; if it bubbles and sizzles, you’re good to go!
  • With your hands, take a small portion of the mixture and roll it into a ball about the size of a golf ball. Repeat until all the mixture is shaped.
  • Carefully drop a few balls into the hot oil, turning occasionally until they are golden brown on all sides (about 3-4 minutes). Make sure not to overcrowd the pan.
  • Use a slotted spoon to transfer the cooked puffs to a paper towel-lined plate to drain excess oil. Serve hot, and enjoy!

Notes

Experiment with different types of cheese for unique flavors. You can also prepare the mixture in advance and fry later for a quick snack. Store leftovers in an airtight container in the refrigerator for up to three days.
