  • 2 pieces boneless, skinless chicken breasts Opt for thinly sliced for quicker cooking.
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 8 ounces pasta of your choice (e.g., penne or fettuccine)
  • as needed Fresh basil leaves for garnish

Instructions
 

Cooking the Pasta

  • Begin by cooking the pasta according to the package instructions until al dente. Reserve a cup of pasta water and drain the rest.

Cooking the Chicken

  • Season the chicken breasts with salt and pepper. In a large skillet over medium heat, heat the olive oil.
  • Add the chicken and cook for about 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside to rest.

Preparing the Sauce

  • In the same skillet, add the minced garlic and sauté for about a minute, until fragrant.
  • Pour in the heavy cream and bring to a simmer. Add the chopped sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Stir everything together and let it bubble for a couple of minutes until slightly thickened.

Combining Ingredients

  • Slice the cooked chicken and add it back to the skillet along with the drained pasta.
  • Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

Serving

  • Serve immediately, garnished with fresh basil leaves for a lovely touch!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a pan over medium heat with a splash of cream or broth to revive the sauce. Consider adding a splash of lemon juice or zest for a fresh pop of flavor.
