Ingredients
  

Meatball Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced Fresh garlic recommended
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Sauce Ingredients

  • 1 cup chicken broth
  • 1 cup heavy cream or coconut cream for a lighter option
  • 1/2 cup grated Parmesan cheese
  • for garnish fresh parsley Optional

Preparation

  • In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, chopped onion, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  • Shape the mixture into small meatballs, about 1 inch in diameter. Set aside.

Cooking

  • In a large skillet over medium heat, add a splash of oil and carefully place the meatballs in the skillet. Cook for about 5 minutes, turning them occasionally until they are browned on all sides.
  • Once the meatballs are browned, pour in the chicken broth and bring to a simmer. Reduce the heat to low and stir in the heavy cream, allowing it to thicken.
  • Stir in the grated Parmesan cheese until melted and well combined with the sauce.
  • Allow everything to simmer for about 10 more minutes, ensuring the meatballs are cooked through and the sauce is bubbling.
  • Remove from the heat, garnish with chopped fresh parsley if desired, and serve your succulent meatballs over your favorite side dish!

Notes

Don’t overmix the meatball ingredients to keep them tender. Store leftovers in an airtight container in the refrigerator for up to three days and reheat over low heat with a splash of chicken broth.
