Ingredients
  

For the Mango Sago

  • 1 cup sago pearls
  • 2 pieces ripe mangoes (one for puree, one for garnish)
  • 1 cup coconut milk
  • 1-2 tablespoons sugar Adjust to taste
  • a pinch salt
  • Fresh mango slices for garnish (optional)
  • Mint leaves for garnish (optional)

Instructions
 

Cooking the Sago Pearls

  • Start by boiling a pot of water. Once it’s boiling, add the sago pearls and simmer on medium heat, stirring occasionally, for about 15-20 minutes or until they become translucent.
  • Drain the cooked sago pearls and rinse them under cold water to stop further cooking. Set aside.

Preparing the Mango Puree

  • Peel one of the ripe mangoes and dice it. Place the chunks in a blender and puree until smooth.
  • You can adjust the sweetness by adding sugar to the puree if desired.

Combining Ingredients

  • In a mixing bowl, add the cooked sago pearls, coconut milk, mango puree, and a pinch of salt.
  • Mix well until everything is combined.

Chilling

  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the dessert to chill.

Serving

  • Once chilled, scoop the Mango Sago into bowls and garnish with fresh mango slices and mint leaves for an added touch of beauty!

Notes

For best results, ensure sago pearls are not overcooked. Chill the dessert properly for optimal flavor melding. Can use tapioca pearls if sago is unavailable. Enjoy fresh for the best texture.
