  • 1 large large ripe mango, diced Ensure the mango is ripe but firm.
  • 1 medium medium cucumber, diced
  • 1 cup fresh or frozen blueberries (thawed) If using frozen, thaw and drain excess water.
  • 1 medium medium avocado, diced Add just before serving to prevent browning.
  • 1 none Juice of 1 lime Adds acidity and fresh flavor.
  • to taste none Salt and pepper
  • optional none Fresh mint leaves (for garnish) Add for extra freshness.

Preparation

  • Start by washing all your produce thoroughly. Peel and dice the mango, cucumber, and avocado into bite-sized pieces.
  • If using frozen blueberries, make sure to thaw them and drain any excess water.

Combine ingredients

  • In a large mixing bowl, combine the diced mango, cucumber, and avocado. Gently toss them together to mix, being careful not to mash the avocado.

Add Blueberries and Season

  • Incorporate the blueberries into the salad mixture.
  • Squeeze lime juice over the salad, and season with salt and pepper to taste. Toss gently to coat.

Garnish and Serve

  • If desired, chop fresh mint leaves and sprinkle them over the salad for a refreshing finish.
  • Serve immediately or chill briefly in the fridge for extra coolness.

Notes

Consume the salad soon after making to prevent browning of the avocado. If preparing ahead of time, add avocado right before serving.
