  • 1 pound Ground beef or any lean beef cut, cooked and sliced thin
  • 1 cup Bell peppers, sliced Mixed colors for variety
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 8 ounces Cream cheese, softened
  • 2 cups Cheddar cheese, shredded
  • 1 tablespoon Olive oil, for sautéing
  • to taste Salt and pepper
  • 1 teaspoon Dried oregano Optional

Preparation

  • Preheat the oven to 350°F (175°C) to ensure a perfectly cooked casserole.
  • In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and sliced bell peppers. Sauté for about 5-7 minutes until the veggies are tender.
  • Add the ground beef to the skillet, cook until browned, and season with salt, pepper, and minced garlic. Drain any excess fat, then mix in the cream cheese until well combined.
  • In a large casserole dish, layer the beef and vegetable mixture. Sprinkle half of the shredded cheddar cheese on top.
  • Top with the remaining cheddar cheese and place the casserole in the preheated oven. Bake for about 20 minutes or until the cheese is bubbly and slightly golden.
  • Let it sit for a few moments before serving. Enjoy with your favorite side salads or steamed veggies!

Notes

For optimal flavor, you can use ground turkey or chicken as a lean alternative. Experiment with different cheeses like provolone or mozzarella, and feel free to add mushrooms or zucchini for extra nutrients. Be careful not to overcook the casserole to keep the cheese gooey and melty.
