Ingredients
  

For the dough

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/4 cup sweetener (like erythritol or stevia) Adjust to taste
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup softened cream cheese Ensure it is fully softened
  • 1 tablespoon vanilla extract

For the filling

  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, melted

Optional for frosting

  • cream cheese or powdered sweetener For drizzling on top

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the almond flour, baking powder, sweetener, and salt. Mix well.
  • Add the eggs, softened cream cheese, and vanilla extract. Mix until the dough is smooth.
  • Place the dough on parchment paper and flatten into a rectangle shape, about 1/4 inch thick.
  • In a small bowl, mix together the melted butter, sweetener, and ground cinnamon. Spread this evenly over the rolled-out dough.
  • Roll the dough from the long side into a log and slice into even rolls, about 1 inch thick.
  • Place the rolls on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for 15-20 minutes or until golden brown.
  • Allow the buns to cool slightly before drizzling with frosting or sprinkling with powdered sweetener if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 15-20 seconds or in a toaster oven to keep them warm.
