Ingredients
  

For the Meatloaf

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup ketchup
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

For the Cheesy Potatoes

  • 4 cups frozen hash browns Fresh potatoes can be used as an alternative.
  • 2 cups shredded cheddar cheese Use half mixed into the hash brown mixture.
  • 1 cup milk
  • 1/2 cup sour cream
  • Chopped green onions for garnish

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, ketchup, egg, garlic powder, onion powder, salt, and pepper; mix well.
  • Spread the meat mixture into the bottom of a greased casserole dish.

Hash Brown Mixture

  • In another bowl, combine hash browns, milk, sour cream, and half of the cheddar cheese; stir until well combined.
  • Pour the hash brown mixture over the meatloaf layer in the casserole dish.
  • Top with the remaining cheddar cheese.

Baking

  • Bake in the preheated oven for 60 minutes or until the meat is cooked through and cheese is bubbly.
  • Garnish with chopped green onions before serving.

Notes

Optional: Add vegetables to the meat mixture for extra nutrition. For a spicier flavor, add jalapeños or hot sauce.
