  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract for cheesecake
  • Chocolate chips for topping
  • Whipped cream for serving

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and line your muffin tin with cupcake liners.
  • In a bowl, melt the butter and add sugar, stirring until combined.
  • Mix in the eggs one at a time, followed by vanilla extract.
  • Sift in cocoa powder and mix until just combined.
  • Pour the brownie batter into the cupcake liners, filling each about halfway.
  • In another bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until combined.
  • Spoon the cream cheese mixture on top of the brownie batter in the muffin tin.
  • Bake for 20-25 minutes or until the edges are set. Remove from the oven and let cool.
  • Once cooled, top with chocolate chips and whipped cream before serving.
