  • 1 can chickpeas, drained and rinsed Make sure to rinse well to remove excess sodium.
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced Use fresh lemon juice for best flavor.
  • 2 carrots, diced
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to garnish Fresh parsley Adds a nice touch.

Preparation and Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté until translucent.
  • Stir in the diced carrots and cook for another 5 minutes.
  • Add the chickpeas, vegetable broth, and cumin. Bring to a boil.
  • Reduce heat and simmer for about 20 minutes.
  • Stir in the lemon juice and season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

This soup pairs well with crusty bread or a light salad. For a creamier texture, blend a portion of the soup and mix it back in. You can also add cooked quinoa or rice for a heartier soup.
