Preparation

  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Use a cookie scoop or a tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are slightly golden.
  • Let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

For best results, use fresh lemon juice and zest. Chilling the dough for 30 minutes can enhance flavor and shape. Monitor the baking time as ovens vary to retain soft texture.
