Ingredients
  

  • ¾ cup of all-purpose flour
  • 1 teaspoon of baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • cup vegetable oil
  • ¾ cup granulated sugar
  • ¼ cup freshly squeezed lemon juice
  • ½ teaspoon baking soda
  • 2 teaspoons lemon zest
  • ½ cup whole milk
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan.
  • To make a perfect batter, grab a medium bowl and toss in 1 and 3/4 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon baking powder.
  • In a large mixing bowl, beat together 3/4 cup granulated sugar, 2 large eggs, 1/3 cup vegetable oil, 1/4 cup freshly squeezed lemon juice, 2 teaspoons lemon zest, 1/2 cup whole milk, and 1 teaspoon pure vanilla extract until fully combined.
  • No rush! carefully combine the dry ingredients from the medium bowl into the larger bowl, making sure to mix everything together gently. Avoid over-mixing the batter.
  • Scoop the batter into the ready loaf pan and spread it out evenly. When a toothpick is placed in the center, it should come out dry and clean after 45 to 50 minutes of baking.
  • The loaf should cool for ten minutes in the pan before being removed and finished cooling on a wire rack.
