Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and crushed lavender. Set aside.
  • In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
  • Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined.
  • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them a few inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
