Main Ingredients

  • 1 cup cream cheese (softened) Make sure your cream cheese is properly softened.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon Don't skimp on the lemon zest—it enhances flavor.

Instructions

Preparation

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
  • Mix the Cream Cheese and Sugar: In a large bowl, combine the softened cream cheese and granulated sugar. Use an electric mixer to blend them together until smooth and creamy (about 2-3 minutes).
  • Add the Wet Ingredients: Add the eggs, vegetable oil, lemon juice, and lemon zest to the mixture and mix until fully combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing until there are no dry spots left (be careful not to overmix).
  • Bake: Pour your batter into a greased loaf pan and bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and serve either warm or at room temperature.

Notes

For lower-fat version, substitute Greek yogurt for cream cheese (use plain, unsweetened). Watch baking time closely; start checking after 50 minutes. Avoid overmixing for a lighter texture.
