  • 1 cup all-purpose flour Substitute with gluten-free flour for a gluten-free version.
  • 1 cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 2 large eggs Use room temperature for best texture.
  • 1 medium lemon (zest) Zest before juicing for maximum flavor.
  • cup freshly squeezed lemon juice
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For Dusting

  • 1 tablespoon powdered sugar Optional, for dusting before serving.

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined. Add the eggs and mix until smooth. Stir in the lemon zest and lemon juice, blending until incorporated.
  • In a separate bowl, mix together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients. Stir gently until just combined—be careful not to overmix. The batter should be thick and slightly sticky.

Baking

  • Pour the batter into your prepared baking pan and spread it evenly. Bake for 25-30 minutes or until the edges are slightly golden and a toothpick inserted into the center comes out clean.
  • Allow the Lemon Brownies to cool in the pan on a wire rack. Once cool, dust with powdered sugar if desired, cut into squares, and enjoy!

Notes

To enhance the lemon flavor, feel free to add more lemon zest. Ensure all ingredients are at room temperature. Avoid overbaking to keep them fudgy.
