  • 1 cup cottage cheese (preferably low-fat)
  • 1/4 cup fresh blueberries (or frozen if fresh is unavailable)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1/2 cup rolled oats
  • 1/4 cup protein powder (vanilla flavor works best)
  • 1 zest of one lemon

Preparation

  • Gather your ingredients by measuring all the ingredients for your bites.
  • In a medium bowl, combine the cottage cheese, honey, lemon juice, and zest. Stir until well combined and the mixture is creamy.
  • Gently add in the rolled oats and protein powder and mix until everything is well incorporated. Finally, fold in the blueberries, being careful not to squish them.
  • Cover the mixture and let it chill in the refrigerator for about 15-20 minutes.
  • Once chilled, wet your hands slightly and roll the mixture into small balls, about 1 inch in diameter.
  • Place the protein bites in an airtight container in the fridge. They can be enjoyed right away or stored for later snacking.

Notes

For a smoother texture, blend the cottage cheese before mixing. Adjust the sweetness by adding more or less honey. You can swap blueberries for strawberries or raspberries for a delightful twist. These bites can be stored for up to a week in the refrigerator or frozen for longer storage.
