  • 2 cups cooked turkey, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1 cup corn (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth

Spices

  • 2 tablespoons chili powder
  • 1 teaspoon cumin

Preparation

  • In a large pot, heat a little olive oil over medium heat. Add the diced onions and minced garlic, sautéing until the onions become translucent.
  • Once the onions are translucent, add the shredded turkey, black beans, kidney beans, diced tomatoes, corn, and chicken broth. Stir well to combine.
  • Sprinkle in the chili powder, cumin, salt, and pepper. Stir everything together, ensuring the spices coat all the ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 20 minutes to allow the flavors to meld.
  • Give your chili a taste, and adjust the seasoning as needed. If you like it spicier, feel free to add some hot sauce or more chili powder!
  • Ladle the chili into bowls and top with your favorite garnishes, like avocado or cilantro. Enjoy the flavors of this satisfying dish!

Notes

For a thicker chili, let it simmer uncovered for an additional 5-10 minutes. Experiment with adding other vegetables like bell peppers or zucchini for extra nutrition!
