  • 2 cups leftover mashed potatoes

  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Preparation

  • Gather all your ingredients and measure them out to streamline the cooking process.
  • In a large mixing bowl, combine the leftover mashed potatoes, shredded cheese, flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until well-combined and a thick dough forms.
  • Using your hands, take a small amount of the mixture and shape it into balls about the size of a golf ball. Flatten them slightly for a disc-like shape if preferred.
  • In a large skillet or frying pan, pour in oil until it’s about an inch deep. Heat the oil over medium-high heat until hot but not smoking.
  • Carefully place the potato balls into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy.
  • Transfer the puffs to a paper towel-lined plate to drain excess oil. Serve warm, garnished with fresh herbs or your favorite dipping sauces.

Notes

For best results, experiment with cheese types and adjust flour as needed. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
