Cuisine Italian
- 1 pound ground beef or turkey
- 1 medium onion chopped
- 2-3 cloves garlic minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef or vegetable broth
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
- Salt and pepper to taste
Cook the Meat: In a large pot over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.
Add Onions and Garlic: Stir in the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
Incorporate Tomatoes and Broth: Pour in the crushed tomatoes and broth. Add Italian seasoning. Bring the mixture to a boil.
Noodles In: Add the broken lasagna noodles to the pot. Reduce the heat and let it simmer for about 10-12 minutes, or until the noodles are tender.
Cheesy Goodness: Stir in the ricotta cheese until it's well blended. Allow the soup to heat through.
Garnish and Serve: Serve hot, topped with shredded mozzarella cheese and fresh basil.
